100 Calorie Breakfast Cheese Omelette
2 Extra Large Egg Whites – 50 Calories
½ Ounce of Your Favorite Cheese – 50 Calories
Pepper To Taste - FREE

Blend your eggs to desired fluffiness.  Place the mixture in a hot omelette pan that has been sprayed with Pam.  Cook on medium until the eggs are no longer runny.  Sprinkle cheese on your omelette, add pepper if desired.  Fold over onto your plate.

Makes One 100 Calorie Serving

100 Calorie Lunch
Blackened Tuna Salad

2 Cups Baby Spinach – FREE
Vine-Ripened Tomato Slices - FREE
½ Cup Fresh Mushrooms, Sliced – FREE
3 Sweet Onion Slices – FREE
2 Ounces Blackened Tuna – 100 Calories
Walden Farms Calorie-Free Russian Dressing

Place spinach on a salad plate.  Top with tomatoes, mushrooms, onion and blackened tuna.  Drizzle salad dressing on top.

Makes One 100 Calorie Serving

Tasty Option
Add 4 tablespoons of real bacon bits for only 100 calories.

100 Calorie Dinner
Eggplant Parmesan
1 Large Eggplant - FREE
Salt - FREE
15 Ounce Can of Whole Tomatoes - FREE
¼ Cup Beef Broth - FREE
½ Cup Onions, Chopped - FREE
1 Garlic Clove, Minced - FREE
Italian Seasonings To Taste - FREE
Salt and Pepper To Taste - FREE
2 Tablespoons Parmesan Cheese, Grated – 50 Calories
1/2 Ounce Mozzarella Cheese, Shredded – 50 Calories
2 Tablespoons Basil, Chopped - FREE

Cut eggplant lengthwise into 1/4 inch slices.  Arrange one layer in the bottom of a large colander and sprinkle evenly with salt.  Repeat with remaining eggplant, salting, until all eggplant is in the colander.  Meanwhile, prepare the tomato sauce.  In a large pot, place tomatoes, broth, onions garlic, seasoning, salt and pepper; bring to a boil.  Reduce to simmer and cook for 1 hour, stirring occasionally.  When eggplant has drained, press down on it to remove excess water, wipe off the excess salt, and lay the slices out on paper towels to remove all the moisture.  Place eggplant in a casserole dish and top with tomato sauce.  Sprinkle with the cheese and basil. Preheat the oven to 350 degrees.  Bake for 30-45 minutes until the cheese is golden brown and bubbly.
