100 Calorie Dinner #25
Roy’s Famous 100 Calorie Fish
2 Cups Baby Spinach - FREE
1/4 Cup Red Wine Vinegar - FREE
2 Tablespoons Fish Stock, Divided - FREE
Salt, Pepper, Garlic Powder and Italian Seasonings To Taste - FREE
1 Cup Cherry Tomatoes – FREE
3 oz. Flounder, Tilapia or Mahi Mahi - 100 Calories
Make a bed of spinach on a large dinner plate. Place vinegar in a medium bowl. Slowly whisk in 1 tablespoon fish stock and then spices. Add tomatoes, toss and set aside. Sprinkle fish with salt, pepper and spices on each side. Heat 1 tablespoon fish stock in a medium non-stick skillet that has been sprayed with Pam. Cook fish 5-8 minutes each side. Place fish on spinach bed. Place tomato mixture in skillet and cook until the tomatoes burst. Pour mixture on top of fish.
Makes One 100 Calorie Serving
