Fruit salads are refreshing, sweet and delicious in addition being a healthy choice for a snack or dessert. Today I have three wonderful 100 calorie fruit salad recipes for you from The 100 Calorie Diet Cookbook. Enjoy!
Refreshing Fruit Salad
1/2 Cup Orange Juice – 50 Calories
1 Tablespoon Sugar - 50 Calories
1 Cup Fresh Blueberries - 100 Calories
1 1/2 Cups Fresh Blackberries - 100 Calories
2 Cups Fresh Cantaloupe, Cut Into Chunks - 100 Calories
1 Cup Fresh Grapes - 100 Calories
2 Cups Fresh Honeydew Melon, Cut Into Chunks - 100 Calories
1 1/2 Cups Fresh Raspberries - 100 Calories
2 Cups Fresh Strawberries, Halved – 100 Calories
In a small bowl, whisk orange juice and sugar together. Set aside. Place remaining ingredients in a large bowl. Gently toss in orange juice mixture. Chill for two hours.
Makes eight 100 calorie servings.
California Fruit Salad
1/2 Cup Orange Juice - 50 Calories
1 Medium Banana, Sliced - 100 Calories
1 Cup Grapes - 100 Calories
1 Large Orange; Peeled, Sliced and Quartered - 100 Calories
1 Medium Peach or Nectarine, Pitted and Cubed – 50 Calories
Combine all ingredients in a medium bowl. Chill for two hours.
Makes four 100 calorie servings.
Tropical Fruit Salad
1/2 Cup Orange Juice - 50 Calories
1 Tablespoon Sugar - 50 Calories
2 Medium Bananas, Sliced – 200 Calories
2 Cups Blueberries – 200 Calories
2 Cups Seedless Grapes – 200 Calories
2 Kiwis, Peeled and Sliced - 100 Calories
2 Medium Nectarines, Peeled and Diced – 100 Calories
1 Large Mango, Peeled and Diced - 200 Calories
2 Cups Fresh Strawberries, Halved – 100 Calories
In a small bowl, whisk orange juice and sugar together. Set aside. Place remaining ingredients in a large bowl. Gently toss in orange juice mixture. Chill for two hours.
