A 100 Calorie Dinner? Is That Possible?

Happy Valentine’s Day to all my peeps out there in the blogosphere! I’ve been working on 100 calorie meals, 100 calorie breakfasts, 100 calorie lunches, 100 calorie dinners and 100 calorie recipes! I’m gonna share a 100 calorie dinner with all my 100 calorie friends. Enjoy!
Ginger Chile Tuna Kebobs
3 Tablespoons Rice Vinegar - FREE
2 Tablespoons Fresh Ginger, Finely Grated - FREE
1 Garlic Clove, Finely Grated - FREE
2 Tablespoons Soy Sauce - FREE
1 Tablespoon Fresh Cilantro, Chopped - FREE
1 Serrano Chile, Seeded and Minced - FREE
Freshly Ground White Pepper - FREE
3 Ounce Ahi Tuna, Cubed - 100 Calories
Nonstick Vegetable Oil Spray - FREE
1 Red and Green Bell Pepper, Cut Into 1” Squares - FREE
1 Sweet Onion, Cut Into 1” Squares - FREE
1 Zucchini, Cut Into 1" Squares - FREE
1 Yellow Squash, Cut Into 1" Squares - FREE
1 Metal Skewer
Whisk vinegar, ginger, garlic, soy sauce, cilantro and the chile in medium bowl to blend; season to taste with ground white pepper. Transfer 4 tablespoons of the marinade to a small bowl and reserve. Add tuna to remaining marinade and toss to coat. Cover and refrigerate overnight. Spray grill rack with nonstick spray and fire it up to medium high. Alternate tuna cubes with vegetables on your metal skewer. Grill to desired doneness, turning frequently, about 4 minutes total for medium-rare. Transfer to a plate. Drizzle reserved marinade over tuna and vegetables.
