I’ve got a great 100 calorie recipe for you today!  This is one of my favorite 100 calorie recipes, 100 calorie eggplant parmesan.  Note that my 100 calorie recipes are in 100 calorie portions.  If you want 200 calories, have 2 servings, if you want 300 calories, have 3 servings and so on.  This is how The 100 Calorie Diet works!  Eat anything you want in 100, 200, 300, 400 and 500+ calories!  Enjoy!  Want to learn more about The 100 Calorie Diet?  Click HERE!

Eggplant Parmesan Casserole

1 Large Eggplant, Cut Into 1/2 Inch Slices

1/4 Cup Olive Oil

1 Onion, Chopped

8 Ounces Fresh Mushrooms, Sliced

2-3 Garlic Cloves, Minced

2 Cups Traditional Ragu Sauce

2 Teaspoon Sugar

1 Tablespoon Vinegar

1 Package McCormick Thick and Zesty Spaghetti Mix

Basil and Oregano To Taste

Salt and Pepper To Taste

1 1/2 Cups Mozzarella Cheese, Shredded

1/2 Cup Parmesan Cheese, Grated

 

Preheat oven to 450 degrees.  Arrange eggplant slices in layer on Pam sprayed cookie sheet.  Brush with olive oil. Bake 30 minutes until browned.  Reduce oven to 350 degrees.  Heat 1 tablespoon oil on medium high in a large skillet.  Add onion, mushrooms, and garlic; sauté 5 minutes until soft.  Add Ragu, sugar, vinegar, spaghetti mix, basil, oregano, salt and pepper, bring to a boil.  Reduce heat and simmer, uncovered, about 20 minutes.  Layer half of eggplant slices in your casserole dish.  Top with half of sauce, Mozzarella, and Parmesan cheese. Repeat layers.  Bake 45 minutes until cheese is golden brown and bubbly.

 

Makes Eighteen 100 Calorie Servings
