Beef Burgundy Recipe From The 100 Calorie Comfort Foods Cookbook - A Perfect Recipe For The 100 Calorie Diet

I’m a comfort food kind of girl, so I wrote The 100 Calorie Comfort Foods Cookbook for all to enjoy.  Today, I have one of my favorite recipes from The 100 Calorie Comfort Foods Cookbook, Beef Burgundy.  Yummy!  It’s a perfect meal for The 100 Calorie Diet.  The 100 Calorie Diet isn’t about eating only 100 calories, it’s about eating in 100, 200, 300, 400 and 500+ units.  My Beef Burgundy recipe makes twenty four 100 calorie servings, twelve 200 calorie servings or six 400 calorie servings.  It’s your choice how much to eat.  Enjoy!

Beef Burgundy
1 Tablespoon Vegetable Oil
¼ Cup All Purpose Flour
Salt, Pepper and Garlic To Taste
1 ½ Lbs. Stew Beef
2 Cup Beef Broth
1/2 Cup Carrots, Sliced
8 Oz. Fresh Mushrooms, Sliced
1 Cup Burgundy
1 Cup Canned or Frozen Pearl Onions

In a medium bowl, mix together flour, salt, pepper and garlic.  Dredge beef in seasoned flour.  In a large Dutch Oven, heat oil to medium high.  Add beef and brown on all sides.  Add all ingredients except onions to pot.  Bring to a boil, reduce heat and simmer for 1 hour or until beef is tender.  Add onions and continue to cook for 5 more minutes.

Makes Twenty-Four 100 Calorie Servings, Twelve 200 Calorie Servings or Six 400 Calorie servings
