Bit Off More Than I Can Chew, Continued!

Hillsborough State Park, 1000 feet ahead.  Yeah, we finally made it!  We’re two hours late, but what the heck.  I get bombarded with questions as to why we are sooo late.  The whole gang is there; Amie, Dave, Cameron, Natalie, Kaitlyn, Ethan, Sara, Tammy, Abe, Shyrene, Dustin, Mom, Me, Roy, Marina and Michael.  Everyone is starving, so we start chowing down and I go into all the details of my morning adventures.  Everyone raves about my finger sandwiches, they are just so gosh darn good!

As promised, it’s recipe time!  I’ll have two recipes for you today and you can look forward to more tomorrow.  Try my great finger sandwich recipes and let me know what you think!

 

Reuben Finger Sandwich

2 Thin Slices of Rye Bread - 100 Calories
2 1/2 Tablespoons Kraft Thousand Island Dressing - 100 Calories
3 Tablespoons Sauerkraut - FREE
1 Oz. Boar’s Head Baby Swiss - 100 Calories
2 1/2 Oz. Boar’s Head Corned Beef - 100 Calories

1. Spread the Thousand Island Dressing on the rye bread.
2. Place sauerkraut, cheese and corned beef on top of the dressing.
3. Make into a sandwich and cut into 4 finger sandwiches.

Makes Four 100 Calorie Servings.

 

Turkey Club Finger Sandwich

3 Slices of White Bread - 200 Calories
1 Tablespoon Mayonnaise - 100 Calories
1 Tablespoon Mustard - FREE
2 Slices of Tomato - FREE
1 Oz. Boar’s Head Cheddar Cheese - 100 Calories
3 1/2 Oz. Boar’s Head OvenGold Turkey - 100 Calories
3 Slices Cooked Bacon - 100 Calories

1. Layer your sandwich as follows:
bread, mayo, mustard, tomato, cheese, turkey, bacon, bread, mayo, mustard, tomato, cheese, turkey, bacon, bread.
2. Cut into four triangles.

Makes Two 300 Calorie Servings.
