I Have A Personal Fitness Chef For A Month - Let Me Tell You About It!

Happy Monday all!  If you don’t know this already, I’ll tell you again.  In my family, we have a passion for food!  We love to cook and we love to eat.  That’s why I was over 300 lbs. at one time, simply because I never realized how many calories I was eating.  Now I can still have a passion for food as long as I stay on track with eating what I want the 100 calorie way.

Anyway, about my personal chef.  Every June, my son Roy comes to stay with me for a month.  And, let me tell you, Roy has a gift for cooking AND creating recipes.  He can take the simplest ingredients and turn them into a gourmet meal.  Yeah, he’s that good.  So every day he takes The 100 Calorie Food Counter and creates a 600 calorie meal for us.  When I want spaghetti, Roy made me a fancy angel hair pasta with a bolganese sauce that was simply heavenly.  When I wanted asparagus, he whips up a dish with asparagus, goat cheese and lemon.  When I wanted down home country cookin’, he make me a big ole pot of collard greens and some delicious pan-fried chicken livers.  I’ve enjoyed Chicken Parmesan, Caesar Salad, Marinated Pork Tenderlion AND T-Bone on the grill, Chili, Meatloaf and Pot Roast.  YES!  I’m eating this way and still losing weight!  Amazing, but true!!! Roy and I are working on getting his recipes down on paper, so as soon as we do you will find them here!!!

As an aside, I wanted to talk to all you folks out there that have gotten so far off track and out of control that you are simply miserable.  Remember that hope springs eternal.  You can change your life starting today.  Do it!
