I Made The Best Olive Salad Mix You Have Ever Tasted! Like For Real!

If you didn’t know already, I love sandwiches!  One of my favorite sandwiches is the New Orleans Muffoletta! When I’m in New Orleans, I always make a stop at Central Grocery for their famous Muffoletta.  But what’s a girl to do of she’s "Jonesing" for a Muffoletta and New Orleans is 1033 miles away?  She makes her own Muffoletta, that’s what she does and that’s what I did!


If you want to make a really fantastic Muffoletta, ya gotta make an amazing olive salad and this takes a couple of days.
Here’s What I Bought:
1 Jar Giuliano Pimento-Stuffed Olives
1 Jar Giuliano Pitted Kalamata Olives
1 Jar Giardiniera
1 Jar Pickled Onion
1 Jar Capers
1 Sweet Onion
Garlic
Oregano
Pepper
Lemons
Olive Oil
Fresh Parsley

Here what I did:
1. Smashed about 1/3 of the olives with my fingers
2. Drained Giardiniera and chopped
3. Chopped ~ 6 pickled onion
4. Smashed ~ 1/4 cup capers
5. Chopped 1/2 onion

Mixed all these together

Stirred in garlic, oregano, pepper and juice of 1 lemon

Covered with olive oil

Covered and marinated overnight, stirring occasionally

Added Parsley and continued marinating another day

Each 1/4 cup is about 100 calories
