I have yet another great recipe from The Gasparilla Cookbook which I have converted into a 100 calorie recipe for all you 100 calorie fans out there! Enjoy! Crab Gumbo
2 Oz. Ham Hock - 200 Calories
3/4 Cup Flour - 300 Calories
4 Cup Chopped Onions - FREE
4 Cloves Garlic - FREE
2 Tablespoons Bacon Drippings - 200 Calories
1 Cup Chopped Green Pepper - FREE
1 Cup Chopped Celery - FREE
1 Tablespoon Salt - FREE
4 Bay Leaves - FREE
1 Tablespoon Crab Boil - FREE
1/2 Pound Chopped Fresh Okra - FREE
1 Pound Shrimp - 400 Calories
1 Pound Crabmeat - 400 Calories
Boil ham about 2 hours in 3 quarts of water. Brown flour, onions and garlic in bacon drippings, stirring constantly. Add 2 1/2 quarts of water, then green pepper and celery. Add salt, bay leaves and crab boil. Boil slowly 1 1/2 to 2 hours. During last hour of cooking add okra and at least 2 quarts of water from ham hock. When nearly ready to serve, add shrimp and crabmeat and boil 15 minutes. Serve with rice.
Makes Five 300 Calorie Servings
