Let’s Party The 100 Calorie Way! Super Bowl XLIII Time!

Hey!  Hey!  Hey!  It’s me, it’s me, it’s SusieT!  Are you ready for some more Super Bowl Party recipes?  If you are, you’re in luck, because parties and recipes are what I do best.  I love me a good party with some good food! Wanna know where I get all these great recipes?  I have my sources.  I thought about not revealing my sources, but The100CalorieBlog is all about sharing, so I’ll give.  For one, my son Roy has an amazing talent for cooking up some delicious food.  He’s like me, he loves really good food and was never really interested in desserts and sweets.  Roy and I have a special bond and much of our time together is spent developing 100 calorie recipes.  Good times, good times.

Then I have my mom.  She is Southern through-and-through and I get many of my "Southern" recipes from her, which she got from her mom, which she got from her mom.  We’re 7th generation Floridians, ya know!  We work together to convert her recipes to 100 calorie recipes.  My mom is funny, smart and a joy to be with.  I love her with all my heart.

Next, although I hate to admit it, my ex-husband, Mike, is a really great cook.  As a matter of fact, the Queso Dip recipe in today’s post I got from him.  It is REALLY heavenly.  That reminds me of the song "If heaven ain’t a lot like Dixie, I don’t wanna go."  I am always calling him to get recipes out of him.  He’s cool about it and always gives me delicious recipes.  He may be a "Red Neck" personified, but he does have great recipes!

Then there’s Granny Peggy (my ex Mother-In-Law).  She’s also one of those great Southern cooks and I remember vividly her teaching me how to make biscuits that will just melt in your mouth.  I’ll tap that source some more in the near future.  I think I always liked her more than I liked her son.

I’ll reveal my other sources in another post.  I do have some colorful characters in my circle of friends and family!

So, without further ado, let’s get it on.  It’s time for some more Super Bowl Recipes the 100 Calorie Way!

 

Mike’s Queso Dip

15 oz. Can of Hormel Chili, No Beans - 400 Calories

1 Can of Rotel Tomatoes and Chilies, Drained - FREE

16 oz. Package Velveeta Cheese - 1300 Calories

1. Throw all ingredients into a crock pot, put the setting to low. 

2. Holler "Yee Haw!"

3. Have about 10 Jack and Cokes.

4. Kiss every lady in the room.

5. Stir occasionally until cheese is melted.

Makes Seventeen 100 Calorie Servings (Jack and Cokes not included).

Serve with 100 Calorie Tortilla Chips

 

Salsa From a Bonafide Mexican Grandma (A Secret Source)

8 Large Vine-Ripened Tomatoes, Chopped - FREE

1 Large Sweet Onion, Chopped - FREE

1/2 Bunch Cilantro, Chopped - FREE

2-4 Garlic Cloves, Minced - FREE

2-5 Jalapenos, Chopped - FREE (Take Out The Seeds If You’re a Wimp!)

1/4 Cup Vinegar - FREE

1 Bunch Green Onions, Chopped - FREE

Juice of 2 Limes - FREE

Salt and Pepper To Taste

1. Put tomatoes, onion, garlic and jalapenos into a food processor.

2. Process to desired salsa chunkiness.

3. Place the mixture in a large bowl.

4. Add remaining ingredients, toss well.

Makes Twelve FREE Servings.

    Hey! 100 calories girls; I like that dip. I want some right now! That was soooooooooooooo funny. I’m still laughing.
    No kidding, I have made that dip, and it is so good you wouldn’t believe.  It’s easy to make, and is a hit with all your guest.  mmmmmmmmmmmm funny smart and a joy to be with; that sounds just like me hehe.
