Grandma Eugenia’s Chicken & Dumplings

 

 

1 Whole 2 1/4  lb. Chicken - 1700 Calories

3 Cups Water - FREE

3 Cups Swanson’s Chicken Broth - FREE

1 Medium Onion, Chopped - FREE

1 Carrot, Chopped - FREE

1 Celery Stalk, Chopped - FREE

2 Garlic Cloves, Chopped - FREE

1 Teaspoon Black Pepper - FREE

2 Cups King Arthur All Purpose Flour - 800 Calories

1/2 Teaspoon Salt - FREE

2 Small Egg-Land’s Best Eggs - 100 Calories

5 Tablespoons Land o’ Lakes Butter - 150 Calories

1/2 Cup Buttermilk - 50 Calories

 

 

1. Put chicken, water, broth, onion, carrot, celery, garlic, and pepper in a large Dutch Oven.

2. Bring to boil, reduce and simmer for 1 hour or until chicken is tender.

3. Remove chicken to cool.

4. Remove vegetables from broth, turn to low.

5. In a large bowl, mix together flour, salt, eggs, butter and buttermilk to make a dough ball.

6. Place onto floured surface and kneed 5 times being careful to not over-kneed.

7. Using a rolling pin, roll out dough, cut into 1/4" strips.

8. De-bone chicken and cut into bite size pieces.

9. Add chicken to your broth and bring to a boil.

10. Carefully drop your dumplings into boiling water and cook for 10 minutes.

11. Place into old-fashioned Americana bowls and get ready for some good ole Southern comfort food!
