Hawaiian Luau Chicken
12 oz. (Cooked Weight) Boneless Chicken Breasts – 600
5 oz. Pineapple Juice – 100
2 Tablespoons Sugar - 100
1/2 Cup Soy Sauce - FREE
1/4 Cup Red Wine Vinegar – FREE
3-4 Garlic Cloves, Minced - FREE
Salt and Pepper To Taste - FREE
5 Pineapple Rings - 100
1. Pound chicken breasts to 1/2” thick.
2. In a medium bowl, combine pineapple juice, sugar, soy sauce, vinegar, garlic, salt and pepper, whisk well.
3. Place mixture and chicken in a large sealable plastic bag. Marinate in the refrigerator 24 hours, turning occasionally.
4. Fire up the grill.
5. Grill chicken 5-8 minutes on each side.
6. Grill pineapple 2-4 minutes on each side.
7. Place pineapple rings on top of chicken and serve immediately.
