Marvelous Chicken Marsala

 


4 oz. (Cooked Weight) Boneless Chicken Breasts - 200
1 Tablespoon Olive Oil - 100
2 Tablespoons Butter - 200
3 Garlic Cloves, Chopped - FREE
3 Cups Fresh Mushrooms, Sliced - FREE
3/4 Cup Marsala Cooking Wine - 100
Juice of One Lemon - FREE
1 Cup Chicken Stock - FREE
Salt and Freshly Ground Black Pepper To Taste – FREE

 

1. Pound chicken breasts to 1/4” thick. 
2. In a large skillet sauté garlic in oil and 1 tablespoon of butter over medium high heat for 3 minutes.
3.  Add chicken breasts and cook until golden brown on both sides, about 3 minutes per side. 
4. Transfer to a plate, set aside and keep warm. 
5. Add the remaining 1 tablespoon of butter to the pan, add mushrooms.  Stir and cook until the mushrooms are lightly browned. 
6. To this add Marsala wine and bring to a boil.  When the wine has reduced by half, add lemon juice and chicken stock. 
7. Reduce heat to medium and cook for 3 minutes. 
8. Add chicken breasts to the pan and cook on each side for about 3 minutes more.  Serve immediately.
