Roy B’s Famous Fish
2 Cups Baby Spinach - FREE
1/4 Cup Red Wine Vinegar - FREE
2 Tablespoons Olive Oil - 200
Salt, Pepper, Garlic Powder and Italian Seasonings To Taste - FREE
1 Cup Cherry Tomatoes – FREE
6 oz. (Cooked Weight) Flounder, Tilapia or Mahi Mahi - 200
1. Make a bed of spinach on a large dinner plate.
2. Put vinegar in a medium bowl.
3. Slowly whisk in 1 tablespoon oil and then spices.
4. Add tomatoes. Set aside.
5. Sprinkle fish with salt, pepper and spices on each side.
6. Heat 1 tablespoon oil in a medium non-stick skillet.
7. Cook fish 5-8 minutes each side.
8. Place fish on spinach bed.
9. Place tomato mixture in skillet and cook on medium high until tomatoes burst.
10. Pour tomatoes on top of fish. Serve immediately.
