Susie’s Favorite Zero Calorie Spinach Salad - Great For The 100 Calorie Diet Fans!

It’s me, it’s me, it’s Susie T!!! As I told you I have been busy writing The Zero Calorie Soup and Salad Cookbook. I added a recipe today that is one of my absolute favorites, Zero Calorie Spinach Salad. What’s really great about this salad is that not only is it Zero Net Calories, the ingredients are packed full of vitamins, minerals, anti-oxidents and phytonutrients! Imagine the wonders, you can eat zero calorie AND get healthy at the same time. I also included some 100 calorie "Tasty Options" for those of you following The 100 Calorie Diet. Make this salad today!
Susie’s Favorite Spinach Salad
8 Cups Baby Spinach
2 Tomatoes, Chopped
1 Cucumber, Sliced
2 Green Bell Pepper Rings
½ Roasted Red Pepper, Sliced
1 Can Sliced Beets, Drained
1 Sweet Onion, Sliced
2 Pickled Okra, Sliced
1 Cup Mushrooms, Sliced
2 Tablespoons Capers
Juice of 1-2 Lemons
¼ Cup Red Wine Vinegar
Salt, Pepper and Granulated Garlic To Taste
Place the spinach in a large salad bowl. Arrange the tomatoes, cucumber, bell pepper, onion, okra, mushrooms and capers on top of the spinach. Sprinkle with the lemon juice. In a small bowl, whisk the vinegar, salt pepper and garlic. Drizzle the dressing over you salad.
Tasty Option
*Add ¼ Cup feta cheese for 100 calories
*Add 3 ounces of blackened tuna for 100 calories
