Susie’s Simple, Yet VERY Delicious 100 Calorie Recipes

On Saturday, Marina asked me to make parmesan encrusted fish and Caesar salad. She’s doing so good on The 100 Calorie Diet, having lost 15 lbs. She’s so proud and I’m so proud! Anyway, I created a really delicious yet simple fish recipe in addition to a killer salad. Try my recipes and let me know what you think!
Susie’s Simple Caesar Salad
1 Garlic Clove, Minced - FREE
4 Cups Romaine Lettuce, Chopped - FREE
8 Teaspoons Naturally Fresh Caesar Salad Dressing - 200 Calories
1/4 Cup Parmesan Cheese, Shredded - 100 Calories
1/4 Cup Croutons - 100 Calories
1. Rub salad bowl with garlic.
2. Place remaining ingredients into bowl and toss gently.
Makes Two Very Yummy 200 Calorie Servings.
Susie’s Very Simple Parmesan Encrusted Mahi Mahi
9 oz. Mahi Mahi Fillets - 600 Calories
1 Garlic Clove, Minced - FREE
Black Pepper To Taste - FREE
1 Tablespoon Butter , Melted- 100 Calories
1/4 Cup Parmesan Cheese, Shredded - 100 Calories
1. Preheat oven to 350 degrees F.
2. Prepare Mahi Mahi fillets by rubbing with garlic and black pepper.
3. Place butter and parmesan cheese into a small baking pan.
4. Place fillets on cheese mixture and turn making sure the parmesan is evenly distibuted on both sides of the fish.
5. Bake for 25 minutes.
6. Broil on high for 5 minutes or until the cheese is golden brown.
Makes Two 400 REALLY Delicious Calorie Servings!
