Yang! Yang! Yang! Good morning (good afternoon, good evening and goodnight) to all my peeps out there in 100 Calorie Land! For those of you who don’t already know, I live in Central Florida and spring has sprung and the weather is absolutely and stunningly beautiful! As I sit here at my computer, right before sunrise, it is a mild 62 degrees with little humidity. A cool breeze sways through the palm trees as I hear birds singing their birdsongs to welcome the new morning, a train whistles in the distance. Me thinks it’s a perfect beach day. Just another day in paradise!
Anyway, I want to encourage y’all to check out all the delicious recipes on this blog. All recipes are FREE, 100, 200, 300, 400 or 500 calories per serving. My recipes ARE NOT diet recipes. They are REAL recipes for real people. Try my recipes and let me know what you think. You know, you can eat good food and still lose weight on The 100 Calorie Diet! Roy’s Zesty Salsa
4 Medium Vine Ripened Tomatoes, Chopped - FREE
1 Onion, Chopped - FREE
1 Jalapeno Pepper, De-Seeded, Mince - FREE
1/2 Yellow Bell Pepper, Chopped - FREE
1/2 Red Bell Pepper, Chopped - FREE
1/2 Orange Bell Pepper, Chopped - FREE
2 Garlic Cloves, Minced - FREE
3 Tablespoons Fresh Parsley, Minced - FREE
Salt and Pepper To Taste - FREE
Juice of 1 Lime - FREE
Combine all ingredients in a medium bowl. Refrigerate at least 1 hour before serving.
Makes eight FREE servings.

Pasta e Fagioli
6 oz. (Cooked Weight) 90/10 Ground Beef – 400
3-5 Garlic Cloves, Minced - FREE
1 Medium Onion, Chopped - FREE
4 Carrots, Chopped - FREE
3 Celery Stalks, Chopped - FREE
32 oz. Beef Broth - FREE
14 1/2 oz. Can of Diced Tomatoes - FREE
14 1/2 oz. Can of Tomato Sauce - FREE
2 Tablespoons Tomato Paste - FREE
1/2 Cup Canned Kidney Beans - 100
1/2 Cup Canned Great Northern Beans - 100
1 Teaspoon Italian Seasoning or To Taste - FREE
2 Teaspoons Fresh Parsley, Chopped - FREE
1 Cup of Your Favorite Pasta, Cooked Al Dente - 200
Salt and Pepper To Taste - FREE
In a large soup pot, cook beef until almost brown. Add garlic, onion, carrots and celery and cook 5-10 minutes. Add remaining ingredients and simmer for 30-40 minutes or until vegetables are soft.
Makes eight 100 calorie servings.
Bistro Beef Burgundy
2 Tablespoons Flour - 50
1 Teaspoon Salt - FREE
1/2 Teaspoon Pepper - FREE
1 Teaspoon Garlic Powder - FREE
13 oz. (Cooked Weight) Sirloin, Trimmed To 1/4” Fat – 1300
1 1/2 Tablespoons Vegetable Oil - 150
1 Medium Onion, Chopped - FREE
1-3 Garlic Cloves, Minced - FREE
5 oz. Burgundy Wine or Dry Red Wine - 100
14 1/2 oz. Can of Beef Broth - FREE
2 Cups Fresh Mushrooms, Sliced - FREE
2 Cups Large Flat Noodles, Cooked - 400
Combine flour, salt, pepper and garlic powder in a medium bowl. Coat beef in flour mix, set aside. Heat oil in a large skillet. Add onion and garlic cloves, sautee for 5-10 minutes. Add floured beef and cook over medium high heat until meat is browned, stirring often. Add remaining ingredients and bring to a boil. Reduce heat and cook on medium low for 1 hour or until meat is tender. Serve over noodles.
Makes four 500 calorie servings.
