Happy Monday!

Do you know what I love?  Salads!  Today I have another of one of my favorite recipes; Greek Salad.  YOU just gotta try this recipe.  It’s YUMMMMMM!!!!!!

Papa’s Greek Salad


Make potato salad first:
Potato Salad
1/4 Cup Onions, Chopped – FREE
2 Tablespoons White Wine Vinegar - FREE
3/4 Cup Boiled Potatoes, Peeled and Chopped - 100
1 Tablespoon Green Onion, Chopped - FREE
1 Tablespoon Fresh Parsley, Chopped - FREE
1 Tablespoon Mayonnaise - 100
Salt and Pepper To Taste – FREE

Place onions and vinegar in a small bowl.  Let set for 10 minutes.  Drain.  In a medium bowl, place potatoes, onions and parsley.  Add mayonnaise, salt and pepper, toss lightly.  Chill in refrigerator for 30 minutes.

Salad
Outside Lettuce Leaves - FREE
2 Cups Iceburg Lettuce, Shredded - FREE
1 Tomato Cut Into Eighths - FREE
4 Cucumber Slices - FREE
1 oz. Feta Cheese, Crumbled - 100
2 Green Bell Pepper Rings - FREE
4 Slices Canned Beets (Not Pickled) - FREE
2 Large Shrimp, Cooked and Peeled - 50
6 Anchovy Fillets - 25
5 Greek Olives - 25
2 Pepperoncini Peppers - FREE
2 Radishes - FREE
2 Green Onions, Whole - FREE
2 Tablespoon White Vinegar - FREE
1 Tablespoon Olive Oil - 100
Salt, Pepper and Oregano To Taste – FREE

Line a large salad bowl or plate with outside lettuce leaves.  Place the potato salad in the center.  Cover the potato salad with lettuce.  Arrange tomato and cucumber on top of the lettuce.  Place feta cheese on salad.  Arrange bell pepper, beets, shrimp, anchovies, olives, peppers, radishes and green onions on top of feta.  Sprinkle salad with vinegar, oil, salt, pepper and oregano in that order.  Serve immediately.
Makes one 500 calorie serving.
