What to do with all that blue crab you caught? Make yummy sandwiches! I have a delicious recipe from The Gasparilla Cookbook. It’s crabby, it’s mushroomy, it’s tomatoy, it’s cheesey, it’s classic Florida fare. Enjoy!
Toasted Blue Crabmeat Sandwiches
3/4 Cup Fresh Mushrooms - FREE
2 Tablespoons Butter - 200 Calories
6 Tomato Slices - FREE
6 Sliced Bread, Crust Removed - 300 Calories
1 Egg, Beaten - 50 Calories
8 Oz. Blue Crabmeat, Flaked - 200 Calories
1/4 Teaspoon Salt - FREE
1 1/2 Oz. Sharp Cheddar Cheese, Grated - 150 Calories
1. Saute mushrooms in butter about 5 minutes.
2. Place slice of tomato on each slice of bread.
3. Spoon 2 tablespoons mushroom over each.
4. Mix crabmeat, egg and salt.
5. Put a portion over mushrooms.
6. Sprinkle with cheese.
7. Place sandwiches under broiler until cheese is melted.
Makes Three 300 Calorie Servings
