Super Tasty Spinach Salad

4 Cups Fresh Baby Spinach - FREE

1 Large Vine Ripened Tomato, Chopped - FREE

6 Fresh Mushrooms, Sliced - FREE

1 Cucumber, Sliced - FREE

1 Roasted Red Pepper - FREE

8 Caper Berries - FREE

1 Red Onion, Cut into Rings - FREE

2 Tablespoons Red Wine Vinegar - FREE

Juice of 1 Fresh Lemon (Optional) - FREE

Salt and Pepper To Taste - FREE

1. Place spinach on a large plate.

2. Arrange remaining vegetable ingredients on top of the spinach.

3. Sprinkle salad with vinegar, lemon, salt and pepper in that order.

Makes Two FREE Servings.

Tasty Options

*Add 2 small hard boiled eggs or 1 oz. of your favorite cheese for about 100 calories.

*Top salad with 3 oz. of cubed turkey for only 100 calories.

Gorgeous Greek Salad

Outside Lettuce Leaves - FREE

4 Cups Iceberg Lettuce, Shredded - FREE

1 Tomato, Cut Into Eighths - FREE

4 Cucumber Slices - FREE

2 Green Bell Pepper Rings - FREE

4 Slices of Canned Beets (Not Pickled) - FREE

2 Pepperoncini Peppers - FREE

2 Radishes - FREE

2 Green Onions, Whole - FREE

2 Tablespoon White Vinegar - FREE

Salt, Pepper and Oregano To Taste - FREE

1. Line a large salad bowl or plate with outside lettuce leaves. Pile the shredded lettuce on top of the lettuce leaves.

2. Arrange tomato and cucumber on top of the lettuce. Arrange bell pepper, beets, peppers, radishes and green onions on top of tomato and cucumber.

3. Sprinkle salad with vinegar, salt, pepper and oregano in that order. Serve immediately.

Makes Two FREE Servings.

Tasty Options

To turn this recipe into a Classic Greek Salad, add:

1 oz. feta cheese – 100 Calories

2 Large Shrimp, Cooked and Peeled – 50 Calories

6 Anchovy Fillets – 25 Calories

5 Greek Olives – 25 Calories

1 Tablespoon Olive Oil – 100 Calories
