Yang! Yang! Yang! I love a stuffed chicken breast and have a great recipe for you today! If you like chicken, if you like spinach, if you like cheese, you’re gonna love my Spinach Stuffed Chicken Breasts! Enjoy!
Spinach Stuffed Chicken Breasts
4 , 6 Oz. Boneless Chicken Breasts With Skin - 1600 Calories
Salt, Pepper, Garlic and Paprika To Taste - FREE
1 Onion, Chopped - FREE
1 Tablespoon Olive Oil - 100 Calories
1 Tablespoon Butter - 100 Calories
1 Lb. Fresh Spinach, Chopped - FREE
1/4 Cup Ricotta Cheese - 100 Calories
1/4 Cup Parmesan Cheese - 100 Calories
1-2 Tablespoons Fresh Basil - Chopped
1. Preheat oven to 375 degrees.
2. Sprinkle chicken with salt, pepper, garlic and paprika as desired.
3. In a large skillet, saute onion in olive oil and butter over low heat until onions are translucent.
4. Add spinach and cook over medium low until wilted.
5. Transfer mixture to a bowl to cool.
6. Add remaining ingredients, mix lightly. Add more salt, pepper and garlic if desired.
7. Form a pocket for the mixture by loosening the skin on each breast.
8. Stuff each breast with an equal amount of filling.
9. Place in baking dish, skin side up.
10. Bake 45-55 minutes or until skin is golden brown.
Makes Four 500 Calorie Servings.
