Winter Feast Old Florida Cracker Style

Sometimes I get really lucky when my brother has a good day with his cast net at the Courtney Campbell Causeway. When the mullet are running, he can catch a rightly good mess of mullet with enough to share. He knows I love me some mullet and so do my sweet peas. You can smoke ‘em, you can barbeque ‘em, you can bake ‘em, you can broil ‘em and you can fry ‘em.
So, out of his generousity, I find myself with three big ole mullet (already cleaned) and two great big mullet roe (Cracker caviar, y’all!). What to do, what to do? I decide to take the easy route and bake them suckers with some hickory smoked barbeque sauce. It’s simple and fast, not to mention delicious! While the mullet is cookin, I whip up some of my mom’s famous coleslaw and Marina does her magic with cheese grits. Let me tell ya, it’s on! Me and the sweet peas have a winter feast while the radiantly orange sun sets in the East saying goodbye to yet another day in paradise.
Florida Winter Feast 100 Calorie Recipes:
Barbequed Mullet
3 Big Ole Mullet, Butterflied - 800 Calories
Salt, Pepper and Garlic To Taste - FREE
5 Tablespoons Kraft Hickory Smoked Barbeque Sauce - 100 Calories
1. Pre-Heat oven to 375 degrees.
2. Season mullet with salt, pepper and garlic to taste.
3. Place mullet in baking dish, meat side up. Bake for 50 minutes.
4. Brush barbeque sauce on fish and bake an additional 10 minutes.
Makes Three 300 Hundred Calorie Servings
Mom’s Famous Coleslaw
5 Cups Cabbage, Grated - FREE
1 ½ Cup Carrots, Grated - FREE
½ Cup Onion, Grated - FREE
1 Cup Mayonnaise - 1500
2 Tablespoons Vinegar - FREE
2 Tablespoon Sugar - 100
Salt, Pepper & Garlic To Taste - FREE
Mix all ingredients together. Cover and refrigerate for at least 2 hours.
Makes Sixteen ½ Cup 100 Calorie Servings
Marina’s Cheese Grits
5 Cups of Water - FREE
½ Teaspoon Salt - FREE
1 Cup Quaker Oats Old Fashioned Grits - 500 Calories
3 Oz. Cheddar Cheese - 300 Calories
1. Bring water to boil in a large pot.
2. Slowly stir in grits and salt.
3. Reduce heat to low and cover.
4. Cook 15 - 20 minutes stirring occasionally until thickened.
5. Slowly stir in cheese.
Make Four 200 Calorie Servings
Whatever happened to the Cracker caviar, you might ask. Don’t worry, I’m saving that special delight for another day. I guarantee you’ll love it!

Here is a recipe sent in by a 100 Calorie Fan:
I made some fish the other night and it was devine. I took a salmon filet with the skin on, and put it in an aluminum foil bowl. Then I just put a few table spoons of soy sauce and let it sit. Mean while, I lit a charcoal grill and soaked some hickory wood chips. I cut up some baby asparagus and made a sauce of bit of lime juice, bit of lemon juice, some soy sauce, a tbsp of sugar, garlic paste, and finely sliced scallions. When the grill was ready, I put the wood chips on the coals. Then i put on the salmon skin side DOWN. Then I put the asparagus on a cooler side of the grill so they could cook a bit slower. When the salmon and asparagus was done to my liking, I took both of them off and tossed the asparagus in the citrus soy dressing. It was some goooood eatin.!!! by: thekingofcarsroy
