Baked Blooming Onion w/Horseradish Dipping Sauce
2 large sweet onions
1 teaspoon salt
1 teaspoon granulated garlic
1/2 teaspoon pepper, freshly ground
1/4 teaspoon paprika
Horseradish Sauce
1/4 cup Dijon mustard
1 tablespoon ketchup
1/4 cup cream style horseradish sauce
Salt, pepper, paprika and cayenne pepper to taste
Preheat oven to 450 degrees. Peel onions, cut the bottom to set flat leaving core intact. To make the blooming flower design, cut the onion from top to bottom stopping 1/2 inch from core. Work your way around the onion to form 10 sections or petals. Loosen petals slightly. Place the remaining ingredients in a small bag and shake well. Spray onions with cooking spray to lightly coat each petal. Put onions in bag, shake gently to coat. Place onions on a roasting pan that has been sprayed with Pam. Spray onions lightly to aid in browning. Bake 40-50 minutes until golden brown. While onions are cooking, blend all horseradish ingredients together, and refrigerate. When onions are ready immediately, place on a serving platter with dipping sauce.
