Zero Calorie Broccoli Cheese Casserole & Zesty Spaghetti Sauce

Wow!  Today’s recipes are all about good ole comfort food with an added bonus, they’re FREE on the 100 Calorie Diet.  It’s really amazing how delicious these dishes are!  Try ‘em, I think you’ll like ‘em!  Make sure to check back with me tomorrow, I’m gonna have a Zero Calorie Mousakka!

 

 

Broccoli Cheese Casserole

½ Cup Swanson’s Chicken Broth - FREE

1 Large Sweet Onion, Finely Chopped - FREE

5 Garlic Cloves, Minced - FREE

1 Head of Cauliflower, Cut Into Florets - FREE

3 Tablespoons Kernel Seasons™ Popcorn Seasoning Nacho Cheddar - FREE

½ Teaspoon McCormick Butter Flavoring - FREE

2 Bunches of Broccoli, Cut Into Florets - FREE

3 Yellow Squash, Grated - FREE

3 Portabella Mushrooms, Chopped - FREE

Salt and Pepper To Taste - FREE

1. Preheat oven to 350 degrees F.

2. In a medium pan, bring chicken broth to boil, add onion and garlic. Sautee 5-10 minutes or until mixture is caramelized. Set aside.

3. Boil cauliflower in salted water (or chicken broth) for 10-15 minutes or until very soft, drain.

4. Place the onion mixture, cauliflower, 2 tablespoons of the popcorn seasoning and butter flavoring in a food processor. Process until very smooth.

5. Boil broccoli in salted water (or chicken broth) for 8 minutes or until tender crisp, drain

6. In a large mixing bowl, place the cauliflower mixture, broccoli, yellow squash, mushrooms, salt and pepper, toss well.

7. Place mixture in a casserole dish. Sprinkle the remaining popcorn seasoning on top. Bake at 350 degrees for 20-25 minutes.

Makes Six FREE Servings.

 

 

Zesty Spaghetti Sauce

½ Cup Swanson’s Beef Broth - FREE

2 Medium Onions, Chopped - FREE

1 Green Bell Pepper, Chopped - FREE

5 Garlic Cloves, Minced - FREE

28 oz. Can of Hunt’s Petite Diced Tomatoes - FREE

28 oz. Can of Hunt’s Diced Tomatoes - FREE

15 oz. Can of Hunt’s Tomato Sauce - FREE

12 oz. Hunt’s Tomato Paste - FREE

1 Tablespoon McCormick Thick & Zesty Spaghetti Sauce Mix - FREE

2 Cups Water - FREE

2 Tablespoons Vinegar - FREE

Salt, Pepper and Italian Seasonings To Taste - FREE

1. Put beef stock in a large pot, bring to a boil.

2. Add onions, bell pepper and garlic. Sautee for 5-8 minutes or until onions have caramelized.

3. Add remaining ingredients, bring to a boil. Cover, turn to medium low and simmer 1-2 hours.

Makes Eight FREE Servings.

Tasty Options

*Top your spaghetti with ¼ cup parmesan cheese for 100 calories.

*If you like sweeter spaghetti, you can add sugar for a mere 16 calories per teaspoon.

*I like to liven up my spaghetti sauces with a dry, red wine like Burgundy. You can add five ounces for about 100 calories.

*Can’t do without your pasta? It’s only 100 calories per ½ cup.
