Zero Calorie Mousakka Recipe Today!

Yang! Yang! Yang! Howdy to all my 100 Calorie Peeps. I’m wrapping up my week of Zero Calorie and Zero Point recipes. As promised, we have Mousakka for you today. I can’t wait ’til y’all try my FREE recipes. Let me know what you think. Also, if any of you out there in the blogosphere have a Zero Calorie or 100 Calorie recipe, send it to me. Savory Vegetable Soup
32 oz. Swanson’s Beef Broth - FREE
2 Medium Onions, Chopped - FREE
4-6 Garlic Cloves, Chopped - FREE
2 Cups Cabbage, Chopped - FREE
6 oz. Can of Hunt’s Tomato Paste - FREE
28 oz. Can of Hunt’s Diced Tomatoes - FREE
14 1/2 oz. Can of Green Giant Green Beans or 2 Cups Fresh - FREE
15 oz. Can of Le Sueur Carrots or 2 Cups Fresh Baby Carrots - FREE
1 Cup Celery, Chopped - FREE
1 Cup Fresh Cauliflower Florets - FREE
Salt and Pepper To Taste - FREE
1. In a large soup pot, place 1 cup of the beef broth, onions, garlic and cabbage. Boil on high 5-10 minutes.
2. Add remaining ingredients and bring back to a boil. Turn heat to medium low and simmer for 30-40 minutes or until vegetables are soft.

Delectable Mousakka
2 Medium Rutabagas, Sliced Into ¼ Inch Rounds - FREE
2 Medium Eggplants - FREE
32 oz. Swanson’s Chicken Broth - FREE
4 Whole Garlic Cloves - FREE
1 Head of Cauliflower, Cut Into Florets - FREE
1 Tablespoon of Kernel Season’s ™ Popcorn Seasoning Nacho Cheddar - FREE
Zesty Spaghetti Sauce (From yesterday’s post) - FREE
1. Preheat oven to 350 degrees F.
2. Place the rutabaga in a medium pot of salted boiling water, boil for 8 minutes, drain and set aside.
3. Cut eggplant into 1 inch slices, salting as you go. Place in colander to drain.
4. Place chicken broth in a large pot. Add cauliflower and garlic, bring to a boil. 5. Boil the cauliflower 10-15 minutes or until very soft.
6. Place the cauliflower and garlic in a food processor, add popcorn seasoning and ¼ cup of the chicken stock.
7. Process the cauliflower until very smooth. Set aside. This will be used as a topping for your mousakka.
8. Grill rutabaga rounds and eggplant rounds on a charcoal or gas grill for 10 minutes each side.
9. Spray a casserole dish with non-stick spray. Layer the dish as follows: Rutabaga, eggplant, Zesty Italian Sauce; rutabaga, Zesty Italian Sauce, eggplant until you have used up all your ingredients.
10. Top the mousakka with the cauliflower mixture.
11. Bake at 350 degrees for 1 hour or until topping is golden brown.
Makes Eight FREE Servings.
Tasty Options
*Add 1 ½ oz. (cooked weight) of lamb for about 100 calories.
*To give this dish an added dimension, add artichoke hearts.

Mousakka is one of my favorite dishes and I can hardly believe that this great tasting dish is zero net calories. You most definitely need to try this recipe!
